In the winter of 2014 I was in a conversation with 2 of my colleagues about how my current restaurant
got started with just 5 lbs. of flour. I shared how when I was about 13 years old living in New Port District, St
Mary, I shared with some of my friends and cousins how I will start a restaurant with just 5 pounds of flour, 3
pounds of chicken and half pint of coconut oil and how a relative at the time, Delroy, laughed at my
idea so hard that he fell asleep laughing that night.. "People cyan start restaurant wid 5 poun' a flour?" Blurted Delroy repeatedly.
" A mussi yuh two fren dem alone yah guh cook fah" as the laughs and ridicule continued.
For
some strange reason I don't remember ever talking about that night to anyone or even
remembering it until that night I was talking with my two colleagues, Cecilia and Lyndon.
That was, of course, after starting my current restaurant with 5 lbs. of flour, half pint of oil and
about 2 lbs. of chicken. What I shared with them moved them, Lyndon said, "you should have
named your restaurant 5Pounds". That stayed with me, though mostly in the background to everything else. In 2021, 5Pounds resurfaced. It was now a fully grown tree, ready to bear fruits. In 2024,
a seed that was planted in a 13 year old boy mind almost 30 years ago in New Port district, in the Parish of St Mary,
Jamaica, Has began to bear and share its fruits. Dig in! Enjoy, a piece of Jamaica in a Bowl!

My Grandmother, Miss Claire, is key in this regard, as I would have gleaned most of my culinary skills and know-how from her. She was a generous woman, a God sent. I remember how she would source the best bread fruits, the best pieces of yams, the best pieces of meats, fish and other wholesome ingredients to feed her family. Her impact on my life is beyond words. You can rest assured that whatever leaves 5 Pounds kitchen to your plate is pure wholesomeness.
